If you are throwing a last minute dinner party and need a quick and easy dessert to whip up, we have you covered. Tarry’s fast 5 minute lemon pie is a no brainer. If you like key lime better than lemon then use limes instead. Citrus is the name of the game.
Tarry brought me a piece of this pie before I has seen the recipe. The pie was refreshing, rich with a zing of lemon. The crust was baked to perfection. When I learned how simple the recipe was, I had to share it with you all.
Seriously, we should all have a fail-proof recipe in our back pocket for last minute dinner parties or just for fun. One of the things that I like best about this lemon pie is that you can serve it chilled or frozen. I personally like it better frozen.
Make it the night before you want to serve it. Keep it in the freezer overnight.
Thaw the pie for about 20 minutes before you want to serve it… less if it is a very hot day. I thaw it just until it softens a little but still has the consistency of ice cream. If you need to whip up a dessert quickly, this recipe is ideal.

- In a large bowl, whisk together the sweetened condensed milk, lemon juice, and lemon zest until smooth and slightly thickened.
- Gently fold in the whipped topping until fully combined.
