- 1 onion coarsely chopped
- 2-3 large carrot coarsely chopped
- 2-3 celery stalks coarsely chopped
- ¼ cup apple cider vinegar
- Filtered cold water

- Preheat your oven to 400°F and roast the raw bones for 1 hour.
- Transfer the roasted bones, vegetables, and apple cider vinegar (ACV) to a crockpot or oven roaster. Add enough water to cover the bones by about an inch.
- Let the mixture sit for 30-60 minutes without turning on the heat. This step allows the vinegar to draw out the minerals from the bones.
- After the soaking period, set the crockpot to low or the oven roaster to 200-225°F. Cook for 24-36 hours.
- Strain the broth. Store it in the refrigerator for up to 7 days, or freeze it for longer: 3-6 months in a regular freezer, or up to a year in a deep freezer.
- Allow the broth to cool to room temperature before freezing. If using glass jars, leave the lids off for 24 hours to accommodate expansion, or the jars may crack during freezing!
