1 cup (2 sticks) unsalted butter, softened1 cup granulated sugar1 large egg2 teaspoons vanilla extract½ teaspoon almond extract (optional but delicious)3 cups all-purpose flour1 teaspoon baking powder½ teaspoon salt
Make the Dough
In a large mixing bowl, cream the butter and sugar together until light and fluffy (about 2–3 minutes).
Beat in the egg, vanilla, and almond extract until smooth.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture, mixing just until combined.
Chill
Divide the dough into two discs.
Wrap each in plastic wrap and refrigerate for at least 1 hour.
Roll & Cut
Preheat the oven to 350°F (175°C).
Roll the chilled dough to about ¼-inch thick on a lightly floured surface.
Cut into shapes using your favorite cookie cutters.
Bake
Place cookies on a parchment-lined baking sheet about 1 inch apart.
Bake for 8–10 minutes, until the edges are just beginning to turn a light golden color.
Let cool on the baking sheet for 2 minutes before transferring to a wire rack.
