Dreamy Chocolate Peanut Butter Tofu Pie

Ingredients
  

  • Chocolate Cookie Crust
  • 1 prepared 9-inch chocolate cookie or Oreo pie crust
  • Chocolate Peanut Butter Filling
  • 1 14-ounce package silken tofu, drained
  • ¾ cup creamy natural peanut butter
  • ¾ cup dark chocolate chips
  • 2 tablespoons coconut oil
  • ¼ cup unsweetened cocoa powder
  • cup pure maple syrup or honey
  • 2 teaspoons vanilla extract
  • ¼ teaspoon sea salt
  • Optional Toppings
  • Fresh whipped cream or coconut whipped cream
  • Chocolate curls or shaved dark chocolate
  • Chopped roasted peanuts
  • Mini chocolate chips
  • Fresh raspberries or strawberries
  • Chocolate drizzle
  • Flaky sea salt

Method
 

  1. Step 1: Melt the Chocolate
  2. Place the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 20-second intervals, stirring after each, until smooth and glossy. Allow to cool for about 5 minutes.
  3. Step 2: Make the Filling
  4. In a blender or food processor, combine:
  5. Silken tofu
  6. Peanut butter
  7. Melted chocolate
  8. Cocoa powder
  9. Maple syrup
  10. Vanilla
  11. Sea salt
  12. Blend for 2–3 minutes until completely smooth, creamy, and silky. Scrape down the sides of the bowl once or twice to ensure everything is well blended.
  13. Step 3: Fill the Crust
  14. Pour the filling into the prepared pie crust.
  15. Smooth the top with an offset spatula or the back of a spoon.
  16. Step 4: Chill
  17. Cover loosely and refrigerate for at least 4 hours, preferably overnight, until the filling is firm and sliceable.
  18. Step 5: Decorate
  19. Just before serving, top with whipped cream, chocolate curls, chopped peanuts, mini chocolate chips, fresh berries, or a drizzle of melted chocolate.
  20. Slice and serve chilled.

Notes

Tofu chocolate pie Gal Pal Tips

  • Use silken tofu. It creates the smooth, mousse-like texture. Firm or extra-firm tofu won't work in this recipe.
  • Choose good-quality dark chocolate (60–70% cacao) for the richest flavor.
  • Blend thoroughly. The filling should be silky smooth with no visible pieces of tofu.
  • For picture-perfect slices, chill the pie overnight and wipe your knife clean between each cut.
