Method
- Make the Soup
- Add the cucumbers, avocados, Greek yogurt, buttermilk, cilantro, green onions, lime juice, garlic, olive oil, salt, pepper, and cayenne to a blender.
- Blend until completely smooth.
- If needed, add a splash more buttermilk until the soup reaches your desired consistency.
- Taste and adjust seasoning.
- Cover and refrigerate for at least 1 hour.
- Prepare the Shrimp
- Pat shrimp dry and season lightly with salt, pepper, and smoked paprika.
- Heat olive oil and butter in a skillet over medium-high heat.
- Cook shrimp for about 2 minutes per side, just until pink.
- Reduce heat.
- Stir in the honey, lime juice, and lime zest.
- Cook another minute, turning shrimp until lightly glazed.
- Remove from heat.
- Assemble
- Divide chilled soup among bowls.
- Top each serving with several glazed shrimp.
- Garnish with cucumber ribbons, diced avocado, herbs, microgreens, cracked pepper, and a drizzle of olive oil.
- Serve immediately.
